Garnish: Ginger slice & Lime wedge

Method
Build over ice in order

Ingredients
30ml Freshly squeezed Lime juice
30ml Homemade ginger syrup
75ml Soda water
50ml Fortuna Script Spiced Rum

Homemade Ginger Syrup
100g Fresh Ginger
50ml (by Volume Sugar)
100ml Boiled Water
Shred the Ginger as much as possible
Combine the Ginger, Sugar & Water
Stirring to dissolve the Sugar
Leave to rest for 20 minutes & strain out.
