Method
Build in tin and churn/ pull through with spoon and top
Ingredients
50ml Lil Ray’s Rum
20ml Pineapple juice
10ml Lime juice
10ml Homemade cinnamon syrup
2 Dash (over the top) angostura bitters
Homemade Cinnamon Syrup
Boil a kettle and mix 100ml boiled water with 100ml (by volume) light brown sugar
Meanwhile lightly break a cinnamon stick into flakes
Stir the cinnamon stick flakes into the sugar mixture and seal in a container with a lid
Give everything a good shake and leave for 1 hour
Strain out the mixture until flake free
The remaining liquid is your cinnamon syrup
