Scottish Sunshine Sour

Ice: Cubed
: Diced watermelon chunks
& lemon wheel

Hard shake & double strain

45ml North Point Spiced Rum
5ml Blue Curaçao
20ml lemon juice
30ml homemade melon syrup*
1 egg white

*Homemade Melon Syrup
500ml boiled water
250ml (by volume) caster sugar
1/4 yellow melon
Dice your melon & add to a sealable container.
combine the sugar & water with it.
Leave to infuse for 12 hours (stirring every so often)
Strain out the mixture & enjoy!
