• TASTING NOTES… On the nose there is a sweetness. It’s mellow, with toffee, butter, caramel and hints of oak ageing, with more elements of the cask coming through. Palate - It’s when you taste it that the Pilot Rum comes alive. The Caribbean styling comes through, with the muscovado and demerara sugar that’s used to make it. Finish - A lovely smoky finish which comes from the Pilot Rum ageing in Highland ex-whisky casks.
• SMALL BATCH RUM… We create small batches of authentic Scottish spirits, and we distil them in the most interesting way. After using the very finest and sustainably sourced sugarcane and molasses from the Caribbean, we use local whisky casks from the Scottish Highlands to mature and finish our spirits.
• PRODUCT OF SCOTLAND… From the North Point Distillery, you can see the perilous Pentland Firth – a channel to be navigated with great care. For hundreds of years ships requiring safe passage signaled ashore to summon the most skilled of seafarers known as the ‘North Coast Pilots’ to come aboard and guide them through the channel. Every so often a ship couldn’t stop and several pilots found themselves whisked away on an unforeseen voyage to the Caribbean – the Birthplace of rum.
